I believe that the Audio Channel Mapping only allows you to select the default Stereo inputs not multichannel ones. To use multichannel inputs in a Multitrack session you have go to each track header and select the relevant input channel from there. That is assuming that the Digidesign ASIO driver actually lets you have access to all eight.
