I am trying to find the Convert Vertex tool in after effects. I am in standard mode, I know it is behind the pen tool but when I press G the only tool that comes up mask feather tool and nothing else....

The screen shots ARE photos if they import and are probably PNG. You can create a smart collection to select just PNG files and then delete them. I don't think there is a way to NOT have the PNG...
